Meatloaf Monday!

If you’re like me, Monday is my day to get stuff done! It’s my day to get ready for the week ahead! So by the time dinner comes around, cooking is the last thing I want to do! This recipe was introduced to me by a really good friend, and it has now become our go-to “MEATLOAF MONDAY”

It is a healthy spin on meatloaf, and all of my family loves it!

The recipe is so easy, and we always have the ingredients it calls for so it is just a no-brainer! If you are really trying to be healthy, you don’t have to use the sauce, as it is pretty much just sugar 😉

Turkey Meatloaf-my husband is not a ground turkey guy but I promise it’s yummy. This is one of his favorite meals!

1 lb ground Turkey

1/4 cup oatmeal

1 egg

1 tsp onion flakes(I use onion powder instead and do about 1/2 tsp)

salt&pepper

(small) can of tomato paste+fill with water

-OR- 1/2 can tomato sauce(I just buy the smallest cans and use a full one of those!)

Sauce

Equal parts ketchup&brown sugar (I usually do 1/2 cup of each) with a squirt of mustard

*Directions:

Mix ingredients together and Cook @375 for 45-1 hour. Add sauce on top for the last 10 minutes.

~When doubled: Use 1/2 cup oatmeal and a little more tomato sauce. Cook for at least an hour!

I Serve it with basmati rice, I add the left over sauce on if I need it, and then whatever vegetables I have! YUM!
